This creamy avocado recipe was a happy accident. I hate to admit that I am really bad about using all of my avocados before they go bad. I have big plans for those avocados, but sometimes life gets away from me and before I know my beautiful creamy avocados have completely spoiled.
One day I was determined to use 2 avocados that were on the verge of spoiling and had fish tacos planned for dinner. Turned out I didn’t have any tortillas and was running low on groceries. This creamy pesto-like spaghetti recipe was the result!
This creamy avocado pasta is decadent. It feels like you’re eating something rich and full of butter cream, but it’s actually incredibly light and super satisfying. Plus, it only take about 25 minutes to whip together.

Avocado & Sundried Tomato Past

Easy 25 min dinner idea that creates a rich yet healthy weeknight meal.
Ingredients
- 2 ripe avocados
- 1 TB whole grain mustard
- Zest of one lemon
- 5 cloves of garlic
- 1 TB honey
- Large handful of fresh basil
- 1/3 cup pasta water
- 1/3 cup sun-dried tomatoes
Instructions
1. Blend everything (except sun dried tomatoes) together until creamy and smooth.
2. Toss with pasta of choice and add sun dried tomatoes. Garnish with Parmesan and fresh cracked pepper.
Notes
Avocados should be ripe for sauce to come out creamy. If you don’t have sundried tomatoes, roast fresh tomatoes on 425 for 25 minutes for a similar flavor profile.
